Chicken Gumbo
- 1 Tbsp. reduced calorie margarine
- 1/2 c. chopped onion
- 1/2 c. chopped celery
- 1 clove garlic, minced
- 1/2 lb. skinned, cooked chicken, cut into chunks
- 1 (26 oz.) can whole tomatoes (undrained), pureed and chopped
- 1 c. sliced fresh mushrooms (can be canned)
- 1/2 c. chopped parsley or 1 Tbsp. dried
- 1/4 c. chopped green pepper
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1 Tbsp. dried basil
- 1 tsp. oregano
- 1/8 tsp. red pepper
- 1 1/4 c. (3 c.) spaghetti, broken into 2-inch lengths
- 1 1/2 to 2 c. (4 c.) cooked, cut up chicken or turkey
- 1/4 c. (1/2 c.) diced pimento (optional)
- 1/4 c. (1/2 c.) green pepper
- 1/2 (1) chopped small onion
- 1 can (2 cans) mushroom soup
- 1/2 c. (1 c.) broth or water
- 1/2 tsp. (1 tsp.) salt
- dash of pepper
- 1/2 lb. (1 lb.) grated Cheddar cheese
- Cook spaghetti; toss all with 2 forks, except a small amount of cheese for topping.
- Top with cheese.
- Bake in a 1 1/2-quart casserole dish at 350u0b0 for 45 minutes.
- Serves 4 to 5.
