Tail-Gate Supreme
- 4 links of hot Italian sausage/hot brats
- 4 Yukon Gold potatoes
- 1 Green Bell Pepper
- 1 Orange Bell Pepper
- 1 Large mild white onion (e.g. Walla Walla Sweet)
- 2 Cups of diced egg plant
- 4 large seeded Roma tomatoes
- Oilve oil
- 4 TBs Italian salad dressing/vinaigrette
- Lemon pepper &
- Salt & Pepper to taste
- Microwave the 4 potatoes an equivalent time for 2 baked potatoes (reduces grill time). Cool and cut to bit size pieces place in zip-lock and add 1 Tbs of Italian dressing/potato. Cut sausage into pieces and bag. Onion/bell peppers cut to bit size and stored in zip-lock with egg plant in a separate bag as is the seed tomatoes that have been quartered and then cut-in-half. Transport to the game in cooler and once Bar-B-Q is hot... place sausage in wire basket and brown on all sides... Add potatoes , peppers, onion, & egg plant. Coat with EV olive oil and season with lemon pepper. When sausage and vegtables are done remove from heat and add the tomatoes and incorporate to mix... Allow the tomatoes to warm.... Serve with your favorite beverage... Enjoy & may your team win....
