Taco Salad
- 4 Tbsp. Taco Bell picante sauce
- 2 peeled and pitted avocados
- 4 oz. pkg. cream cheese
- 1/2 tsp. coarse ground pepper
- juice of 1 lime
- 1 sliced cucumber
- 2 sliced carrots
- 1 thinly sliced red onion
- 2 oz. can sliced black olives, drained
- 1 box Taco Bell tortilla chips
- Slice chicken breasts into bite size strips and brown in large skillet with oil.
- Add Taco Bell taco seasoning mix and water; simmer until reduced.
- Clean and slice all remaining vegetables for the salad.
- Combine all dressing ingredients and blend well.
- Pour into serving dish.
- Place the salad into serving bowl and top with warm chicken.
- Serve with Taco Bell tortilla chips and Avocado Picante Dressing.
- Makes 4 to 6 servings.
- Takes 20 minutes.
