Broiled Salmon Burgers
- 1/2 dup lo-fat Mayonnaise
- 1/4 cup lemon juice, divided
- 1 garlic clove minced
- 1 cup dry breadcrumbs
- 1/4 cup fat-free milk
- 2 tablespoons minced shallots
- 2 tablespoons Dijon mustard
- 5 (4-ounce) salmon fillets (about 1 inch thick)
- Cooking spray
- 5 (2-ounce) hamburger buns with sesame seeds, toasted
- 1. Preheat broiler
- 2. Combine mayonnaise, 2 tablespoons lemon juice, and minced garlic in a small bowl.
- 3. Place breadcrumbs in a shallow dish. Combine 2 tablespoons lemon juice, milk, shallots, and mustard in a medium bowl. Dip each fillet in milk mixture, and dredge in breadcrumbs. Place fillets on a broiler pan coated with cooking spray and broil 7 minutes on each side or until fish flakes easily when tested with a fork.
- 4. Place fillets on bottom halves of buns; spread each with 2 tablespoons of mayonnaise mixture, and cover with a bun top.
