Seafood Creole
- 1 medium onion, finely chopped
- 2 Tbsp. margarine or butter
- 1 small green pepper, chopped
- 1 small stalk celery, chopped
- 1 bay leaf, crushed
- 1 tsp. snipped parsley
- 1 tsp. salt (if desired)
- 1/8 tsp. cayenne red pepper
- 1 (6 oz.) can tomato paste
- 2 c. water
- 1 c. cleaned cooked shrimp
- 1 c. cooked scallions
- 1 c. crabmeat
- 3 c. hot cooked rice
- Cook and stir onion in margarine (or butter) in 2-quart saucepan until onion is tender.
- Stir in remaining ingredients except shrimp and rice.
- Cook over low heat, stirring occasionally, 30 minutes.
- Stir in seafood; heat through.
- Serve over rice.
- Makes 8 servings.
