Grilled Chicken And Spinach Salad
- 4 Boneless Skinless Chicken Breasts
- 1 Pound Baby Spinach cleaned
- 1 Can mandarin oranges
- 1/2 Cup Dried Cranberries
- 1/4 Cup Sunflower Seeds
- 1/2 Cup Shredded Parmesan Cheese
- 1/2 Pint Cherry Tomatoes
- 1/2 Pound Fresh Sliced Mushrooms
- 1 Small Red Onion Cut Into Rings
- Dressing:
- 1/4 Cup red wine vinegar
- 1 teaspoon sugar
- 3 tablespoons soy sauce
- 1 teaspoon grated ginger
- 1/2 teaspoon lemon juice
- 1/4 teaspoon minced garlic
- Grill Chicken Breasts and cut into strips.
- Place cleaned Baby Spinach into salad bowl. Layer chicken, mandarin oranges, dried cranberries, and sunflower seeds. Top salad with onion, mushrooms, shredded parmesan cheese and tomatoes.
- Combine all ingredients and shake well.
- Dress salad just before serving and toss well.
