Spiced Feta Cheese
- 12 oz (376 g) feta cheese
- 1/2 cup (125 mL) olive oil
- 3 tbsp (45 mL) red wine vinegar
- 1 tsp (5 mL) Hungarian paprika
- 2 tsp (10 mL) cracked peppercorns
- 3 dried red chillies
- 2 tsp (10 mL) dried oregano
- 2 tsp (10 mL) dried tarragon
- Flat or pita bread
- 6 green onions, cleaned
- Fresh oregano, tarragon, dill or parsley

- 1. Dice feta into 1/2-inch (1-cm) cubes. Place in bowl. Whisk together oil, vinegar, paprika, peppercorns, chillies, oregano and tarragon. Toss with cheese. Cover and refrigerate. Leave to marinate for two days, turning cheese occasionally.
- 2. Serve with flatbreads, green onions and fresh herbs. Guests can roll the cheese up on the flatbread together with a little onion and fresh herbs
