Turkey Fajitas
- 1 breast of turkey
- 2 pkg. fajita marinade
- 1 or 2 bell peppers
- 1 large onion or 2 medium ones
- Cajun seasoning
- chili powder
- several cloves of garlic
- olive oil
- Serve with tortillas (I use wheat), chopped, diced tomatoes, cheese, peppers, sour cream, etc.
- Cut bone away from turkey breast, then slice breast so that you end up with strips of turkey.
- Mix fajita marinade (usually with vinegar, oil and water) and soak turkey strips in marinade.
- Slice bell pepper and onions into strips; slice garlic.
- Heat oil in large pan; put in garlic slices and then pepper and onions.
- Sprinkle to taste with chili powder and Cajun seasoning.
- Cook to taste (I like mine still with a bit of crispness).
- In another frying pan, heat oil; add in some of the marinade and cook strips of turkey (doesn't take very long).
- As the turkey is finished, place on serving platter.
- Mix in bell pepper-onion-garlic mixture as it is finished.
- Serve with tortillas and whatever else makes you happy!
