Bill'S All Meat Sw Chili
- 1 lb. Chorizo
- 3lbs. Beef Stew Meat or Other cuts (Diced 1/2" - 3/4"cubes)
- 1/4c. Flour
- 1/2 lb. Smokey Bacon Chopped
- 2 Lrg. Onions Diced
- 6 Tbsp. Italian Seasoning
- 2 cans Diced green chilies
- 2 6oz. cans Tomato Paste
- 3 8oz. cans Tomato Sauce
- 2 8oz. cans Crushed tomato
- 3 - 4 tablespoons granulated garlic
- 1 tsp. salt
- 1 tsp. Adobo (Optional)
- 2 tbsp. Chile Powder
- 1/2 Bottle Zinfindel Wine
- 32oz. Beef Stock
- Saute diced onions with bacon in large slow cooker insert. Toss flour, salt and cubed beef together. Add to onion mixture and brown. Add the zinfandel and bring to a simmer for a minute. Add all of the rest of the ingredients and let return to a simmer again. Remove from stove and put in the slow cooker to cook on low for about 4 hrs.
