Peanut Butter Toffee Blondies

  1. Preheat the oven to 350u0b0F. Spray a 9 by 13-inch baking pan with baking spray (or lightly grease). Set aside.
  2. Meanwhile, combine the butter, brown sugar, and granulated sugar in a saucepan over medium-low heat. Stir occasionally until the butter is completely melted and the ingredients are evenly mixed. Continue to cook until the sugars start to melt a bit, but do not allow the mixture to boil. Cook for an additional 5 minutes.
  3. Remove the pan from the heat, and stir in the peanut butter. Allow the mixture to cool until it is cool enough to touch (or to room temperature, if you prefer). Stir in the eggs and the vanilla extract.
  4. In a separate mixing bowl, whisk together the flour, baking powder, sea salt, and baking soda. Pour the peanut butter mixture into the dry ingredients, and stir until just combined. Fold in the peanut butter cups and the toffee bits.
  5. Transfer the batter to the prepared baking pan. Bake for about 25 - 30 minutes, until the blondies start to pull away from the sides of the pan and a toothpick inserted in the center comes out clean (or with just a few wet crumbs). Allow to cool for at least 30 minutes before cutting into squares.
