Chicken Salad Pockets

  1. In medium bowl, combine chicken, celery, raisins and green onions.
  2. In small bowl, combine mayo, lemon juice and ginger; blend well.
  3. Pour dressing over chicken mixture; mix well. Arrange 1/4 of spinach leaves and 1/4 of apple slices in each pocket with the pieces extending slightly over edge of pocket. Spoon 1/4 of chicken salad mixture into each pocket.
