Peanut Butter Pie
- 1 baked pie shell
- 1 c. powdered sugar
- 1/2 c. peanut butter
- 1/4 c. corn starch
- 2/3 c. sugar
- 3 egg yolks
- 2 c. scalded milk
- 1/4 tsp. salt
- 2 tsp. butter
- 1/4 tsp. vanilla
- 1 carton of cool whip
- -mix powdered sugar and peanut butter together until crumbly
- -put half of mixture in bottom of pie shell, save other half
- -mix corn starch, sugar, salt, milk & egg yolks until smooth
- -cook mixture in double boiler until thick(pudding)
- -once thickened add butter and vanilla
- -remove from heat and pour into pie shell
- -let pie cool in refrigerator over night and put cool whip on top and sprinkle the remaining peanut butter and powdered sugar mixture
- -Keep refrigerated
