Banana Nutter Cookies
- 1/2 cup butter
- 3/4 cup peanut butter
- 1 1/2 cups granulated sugar
- 1 cup brown sugar
- 1 cup very ripe mashed bananas
- 2 eggs
- 1 tsp. vanilla extract
- 2 1/2 cups all-purpose flour
- 2 tsp. baking powder
- 1 tsp. salt
- 1 cup chopped walnuts (option: toast walnuts lightly before incorporating into batter)
- Preheat oven to 375 degrees. Lightly grease cookie sheet. Cream butter, peanut butter and sugars in large mixing bowl. Beat in the eggs, banana & vanilla extract. Mix together dry ingredients and stir into wet ingredients. Dough will be somewhat sticky and loose. Stir in walnuts. Place dough in dollops approximately 2 inches apart on cookie sheet. Bake approximately 10-15 minutes until lightly browned. Remove to cooling rack and enjoy.
