Apple Pie Cheesecake
- Crust:
- 1 1/3 C. Graham cracker crumbs
- 1 stick Butter, softened or melted
- 1/4 CtSugar
- 1/4 ttVanilla
- Filling:
- 8 oz. Cream Cheese
- 2 Eggs
- 1 t Vanilla
- 1-2 T Flour
- 4 C Sliced apples (3 Granny Smith)
- 1/2 C Sugar
- 2 - 3 t Cinnamon
- Topping:
- 1/2 C Apricot preserves
- 2 T Water
- 1/4 C sliced almonds (can be toasted)
- Crust:
- Mix all ingredients together and press into bottom of spring form going up sides 1" - 2". Bake for 5 min.at 350 degrees, let cool.
- Filling:
- Beat cream chees, eggs, vanilla and flour with electric mixer till very creamy. Pour into baked and cooled crust.
- Combine apples, sugar, and cinnamon and put on top of filling. Bake 30 - 35 minutes at 350 degrees. Cool very well.
- Topping:
- Heat together apricot preserves and water and spoon over cooled cake.
- Sprinkle almonds on top.
- Refrigerate.
