Nt Jambalaya
- 3 cups cooked rice.
- 1 1/2 teaspoons Caldo de Tomate, chicken flavored.
- 2 stalks of celery, chopped.
- 5 roma tomatoes, chopped.
- 1 white onion, diced.
- 1/2 cup peas.
- 1 cup of baby carrots, chopped.
- 1 pound spicy sausage, ground.
- 1 cup shrimp, chopped.
- 1 1/2 cups mushrooms.
- About a half stick of butter.
- Salt and pepper to taste.
- Saute vegetables in butter, on medium heat, leaving one tomato diced, but unsauted. Add shrimp when vegetables are partially sauted. When everything is soft and slightly brown, remove from heat.
- Fry up sausage in a separate pan. When meat is cooked through add to vegetable / shrimp mixture.
- Add Caldo de Tomate to cooked rice while still hot. Add uncooked tomato to rice.
- Fold all ingredients together and serve.
