Real Chili Joint Chili
- 2 Tbsp. whole cumin
- 2 medium onions, diced
- 3 garlic cloves, diced
- vegetable oil
- 3 1/2 lb. lean beef, cut into 1/2-inch cubes
- 2 Tbsp. paprika
- 6 Tbsp. chili powder
- water
- cracker meal or browned flour for tightener
- In a skillet, lightly toast the whole cumin, then crush with a rolling pin.
- If you use ground cumin, do not toast.
- Saute onion and garlic in a little vegetable oil until transparent.
- In same skillet, add a little more oil and sear meat until it has a grayish color.
- Put cumin, garlic, onion and meat in a large pot. Add paprika and chili powder.
- Stir to mix all ingredients as you add water to cover.
- Simmer for around 1 1/2 hours, adding salt to taste after the chili has cooked for a while.
