Real Chili Joint Chili

  1. In a skillet, lightly toast the whole cumin, then crush with a rolling pin.
  2. If you use ground cumin, do not toast.
  3. Saute onion and garlic in a little vegetable oil until transparent.
  4. In same skillet, add a little more oil and sear meat until it has a grayish color.
  5. Put cumin, garlic, onion and meat in a large pot. Add paprika and chili powder.
  6. Stir to mix all ingredients as you add water to cover.
  7. Simmer for around 1 1/2 hours, adding salt to taste after the chili has cooked for a while.
