Chicken & Sweet Potato Curry
- 2 medium sized onion, cut into several large pieces
- 2 large garlic cloves, peeled
- on 1 inch cube ginger, peeled
- 1 t turmeric
- 2 t cumin
- 1 t paprika
- 3 T white wine vinegar
- 1/4 cup vegetable oil
- one 3 pound chicken, cut up
- 4 cloves
- one 2 inch cinnamon stick
- 3 t brown sugar
- 1 1/2 t salt
- 1 1/2 c water
- 3 sweet potatoes, peeled, quartered
- Put first 7 ingredients in a food processor and process till smooth.
- Brown chicken in a large pan, 6 minutes per side and remove from pan. Remove the skin.
- Add onion paste back to the pan and cook for 1-2 minutes. Add cloves and cinnamon and cook for 1 more minute.
- Add brown sugar, salt and water, and return chicken to the pan. Cover and simmer 30 minutes. Add sweet potatoes, cover and simmer for one hour.
- Reduce sauce if needed.
