Peggy'S Mexican Casserole
- 11/2 pounds ground beef, brown
- 1 can of refried beans (each can is normally 16 oz.)
- 1/4 medium onion, diced
- 3 cups Monterey Jack cheese, shred
- 2 cup cheddar cheese, shred
- 1 package taco mix
- 3/4 cup chunky taco sauce
- 1/2 small can diced green chilies
- 1/2 teaspoon cumin
- 1 teaspoon seasoned salt
- 1. Brown meat and diced onion.
- 2. Mix cumin and salt into meat mixture.
- 3. Mix together in separate bowl, jack cheese, beans and taco mix. In a round casserole dish, spoon bean mixture on the bottom.
- 4. Spoon in the meat mixture.
- 5. Add green chilies, cheddar cheese and taco sauce.
- 6. Bake in preheated oven @ 400 for 20 minutes or until hot.
- Optional: garnish with sour cream and/or guacamole.
