Hearty Granola
- 1/4 cup vegetable oil
- 1 cup maple syrup, reduced to 2/3 cup
- 1 Tbsp. vanilla extract
- 1/2 cup toasted wheat germ
- 1/4 cup sesame seeds
- 1/2 cup shredded unsweetened coconut
- 3 1/2 cups rolled oats
- 1/2 cup pumpkin seeds
- 1/2 cup whole almonds, coarsely chopped
- 1 cup mixed dried fruit
- Preheat oven to 225 degrees.
- Heat oil, syrup in a small saucepan over low heat. Add vanilla.
- Toss wheat germ, sesame seeds, coconut, oats, pumpkin seeds and almonds in a large bowl. Stir in syrup mixture. Spread mixture onto 2 baking sheets. Bake until golden brown; about 1 - 1 1/2 hours, stirring occasionally.
- Transfer to a large bowl, add dried fruits, let cool. Enjoy.
