Bear'S Waldorf Salad
- juice of 2 lemons
- 3 large apples, medium dice (1 tart, 2 sweet)
- 1/2 c mayo
- 1/4 c sour cream
- 2 oz rasins
- 1 oz red onion, minced
- 3 oz walnuts, chopped
- 2 ribs celery, fine dice
- salt and pepper
- 1. Place the lemon juice in a large bowl. As soon as the apples are chopped, place them in the juice and toss to coat. This will not only give the apples a great flavor kick, it will prevent browning. Pour off the lemon juice, reserving 1 T.
- 2. In a small bowl combine the mayo, sour cream, reserved lemon juice.
- 3. Place raisins, onion, walnuts, and celery into the bowl with the apples. Season with a pinch of salt and pepper.
- 4. Pour in the dressing and fold with a rubber spatula until all ingredients are coated.
- 5. Serve over romaine lettuce.
