Cumin-Spiced Black Bean And Corn Summer Salad
- 6 ears organic sweet corn
- 1 can organic black beans, drained
- 6 organic green onions, sliced saving green stem only, reserve 1 onion to use for top of mixture
- 1 quart organic grape tomatoes, sliced in half
- 1 cup organic mayonnaise
- 1/8 teaspoon Ancho Chili Powder
- 1/4 teaspoon ground cumin
- 8 slices organic turkey bacon
- kosher salt to taste
- black pepper to taste
- Grill 6 ears of organic sweet corn, slice corn off husk and place in large bowl. Add 1 can of drained organic black beans. Add 5 of the 6 organic sliced green onions. Add 1 quart of organic grape tomatoes, sliced in half. Set this vegetable mixture aside. Combine 1 cup organic mayo, 1/8 tsp Ancho Chili powder, and 1/4 tsp ground cumin. Fold mayo mixture and vegetable mixture together, being careful not to crush any of the vegetalbes. Cook bacon over medium-high heat in skillet until crunchy (about 5-6 min). Top vegetable and mayo mixture with bacon crumbles, then sprinkle with green onion slices. Scatter grape tomatoes around the rim of the serving bowl for presentation. Refrigerate until ready to serve.
