Cumin-Spiced Black Bean And Corn Summer Salad

  1. Grill 6 ears of organic sweet corn, slice corn off husk and place in large bowl. Add 1 can of drained organic black beans. Add 5 of the 6 organic sliced green onions. Add 1 quart of organic grape tomatoes, sliced in half. Set this vegetable mixture aside. Combine 1 cup organic mayo, 1/8 tsp Ancho Chili powder, and 1/4 tsp ground cumin. Fold mayo mixture and vegetable mixture together, being careful not to crush any of the vegetalbes. Cook bacon over medium-high heat in skillet until crunchy (about 5-6 min). Top vegetable and mayo mixture with bacon crumbles, then sprinkle with green onion slices. Scatter grape tomatoes around the rim of the serving bowl for presentation. Refrigerate until ready to serve.
