Tilapia Baked In In Tamarind Sauce
- 1/2 tablespoon tamarind concentrate
- 1 tablespoon water
- 1 tablespoon lime juice
- 1 tablespoon fish sauce
- 1 tablespoon palm sugar (or brown sugar)
- 1 teaspoon chili sauce
- 1/2 teaspoon shrimp paste
- 1 clove garlic (grated)
- 1 teaspoon ginger (grated)
- 1 tilapia fillet (of other white fish)
- 1 green onion (sliced)
- 1 red chili pepper (sliced)
- 1. Heat the tamarind, water, lime juice, fish sauce, palm sugar, chili sauce, shrimp paste, garlic and ginger in a small sauce pan and stir to combine.
- 2. Taste test the sauce to ensure that the sweet, sour, salty and spicy aspects are balanced.
- 3. Pour 1/2 of the sauce over the tilapia in a baking dish and make sure that the tilapia is fully coated in it.
- 4. Cover with aluminum foil.
- 5. Bake in a preheated 350F oven until cooked, about 15-20 minutes.
- 6. Serve with the remaining tamarind sauce, sliced green onions and red chillies.
