Chicken Cacciatore: My Own
- 2 tbl. spoons olive oil
- whole chicken cut up
- turkey sausage
- 1 onion
- sliced mushrooms: 4 cups?
- 3 cloves garlic
- kalamata olive tapenade
- anchovy paste
- red peppers
- 1/2 cup red wine
- 1 cup chicken stock or broth
- fresh tomatoes, sliced: 5cups?
- salt
- pepper
- pasta
- parmesan cheese
- Pre-heat the oven to 350. Just cook through the chicken and the sausage in the olive oil in a large skillet. Put aside. Cook the onions and the mushrooms. Add the garlic. Add kalamata tapenade, anchovy paste, red peppers. Add the red wine. Cook down for a minute or two. Add chicken broth. Cook down for a minute or two. Add fresh tomatoes. Cook for a minute or two. Season. Put the chicken and sasusage into a caserole. Spoon over the sauce. Put into the oven at 350. Bake for thirty minutes. Serve over pasta with parmesan on top.
