Lizzie And Mera'S Meyer Lemon Tart
- For Crust:
- 9 graham crackers, crushed into dust
- 8 Tbs salted butter, melted
- 3 Tbs sugar
- Salt to taste
- For Filling:
- Zest of approx. 4 Meyer lemons
- 5 egg yolks
- 14 oz can of sweetened condensed milk
- 3/4 cup Meyer lemon juice
- Pre-heat oven to 350 degrees.
- To make crust:
- Combine well-crushed graham cracker with melted butter, sugar, and salt until mixture holds in a ball. Press mixture into bottom and sides of pie pan to form crust. Blind bake for 15 minutes, then let cool to room temperature.
- To make filling:
- Beat the egg yolks with zest until frothy. Beat in the condensed milk and lemon juice. Let sit for approx. 15 minutes.
- Once crust is cool, pour in filling and cook for 14-17 minutes, until slightly jiggly in the center. Cool in fridge (or just leave outside if it happens to be -50 degrees where you are). Serve cold.
