Southwestern Scrambled Eggs
- 1/4 cup Chorizo
- 2 tablespoons Onion Chopped
- 1 tablespoon Vegetable Oil
- 1 tablespoon Jalapeno Pepper Chopped
- 1/2 teaspoon Garlic Powder
- 1/2 teaspoon Salt
- 3 Eggs
- 1/4 cup Mexican Cheese Shredded
- Corn Tortillas
- 1 tablespoon Fresh Cilantro Chopped
- 1 teaspoon Chili Powder
- In a skillet, cook the sausage and onion in oil over medium-high heat until sausage is no longer pink.
- Reduce heat to medium. Add jalapeno, garlic powder, chili powder, and salt. Add eggs; cook and stir until eggs are completely set. Sprinkle with cheese and fresh cilantro. Serve immediately with warm tortillas.
- Tortillas:
- Fry in oil over medium-high heat until lightly browned.
