Gougeres

  1. Preheat oven to 400. Line two large, rimmed, baking sheets with parchment paper.
  2. Combine the water, butter & salt in medium sauce pan, bring to a boil. Reduce heat to low and add the flour, mustard, & cayene all at once. Beat with a wooden spoon until the batter is smooth and pulls away from the sides of the sauce pan. Continue to beat for about another minute to "dry out" the batter. Remove from heat and let the batter cool for about 3 minutes. Beat in 1 egg at a time, beatin well between each addition. Your arm will get sore! Stir in the cheese.
  3. Drop tablespoons of the batter onto the baking sheets. Bake for 30 minutes. Turn off the oven, open the door and let them "crisp" up in the oven for an additional 5 minutes. Serve warm or at room temperature. Makes approximately 2 dozen.
