Welsh Fruit Cake
- 1 3/4 cups Flour
- 1 tsp. Baking Powder
- 3/4 cup Butter
- 1 cup Sugar (1/4" from top)
- 3/4 cup Raisins
- 3/4 cup Sultanas
- 3/4 cup Currants
- 3/4 cup Mixed Fruit or Peel
- 3 Eggs
- 1/4 tsp. Nutmeg
- 1/4 tsp. Cinnamon
- Pinch of Salt
- 2 Tsp. Sugar for the top
- of Cake
- Sift the flour, salt, baking powder and spices together.
- Cream together butter and sugar beating until light and fluffy.
- Beat the eggs and add one at a time to the butter/sugar mixture.
- Fold in the flour and then the fruit.
- Turn into a lined, greased 7" or 8" cake tin.
- Sprinkle the top with sugar.
- Bake in the center of a 350 degree oven for approximately 1 1/2 hours.
