Applesauce Muffins
- 2 sticks margarine, softened
- 2 c. sugar
- 2 eggs
- 1 tsp. cloves
- 2 tsp. allspice
- 3 tsp. cinnamon
- 4 c. flour
- 1 tsp. vanilla
- 2 tsp. baking soda
- 1 tsp. vanilla
- 16 oz. jar applesauce
- Mix margarine, softened, with sugar and add eggs.
- Sift together dry ingredients and blend with first teaspoon of vanilla. Mixture will be very stiff.
- Mix the baking soda with the applesauce in a small bowl and add last teaspoon of vanilla. Mixture should be stirred with a wooden spoon and will foam up. Add applesauce mixture to flour mixture and mix well.
- Spoon into greased muffin tins and top with sprinkling of cinnamon/sugar mixture if desired.
- Bake at 400u0b0 for 12 minutes.
- Makes 3 to 4 dozen.
