Inside Out Ravioli
- 6 oz. pkg. wide egg noodles
- 2 pkg. frozen chopped spinach
- 1 1/2 to 2 lb. lean ground beef
- 1 large onion, chopped
- 1/2 lb. grated sharp Cheddar cheese
- 1/2 lb. Mozzarella cheese
- 1 lb. jar Prego spaghetti sauce or 2 1/2 c. homemade sauce
- 1 small can tomato paste
- 2 eggs, beaten well
- Cook noodles and spinach according to package.
- Drain noodles and place in large bowl.
- Add spinach, drained, eggs and cheese. Place in greased 9 x 13-inch pan.
- Brown meat with onion.
- Add salt and pepper.
- Add sauce and paste.
- Add water if needed for right consistency.
- Simmer 20 minutes.
- Spread sauce over noodle mixture.
- Bake at 350u0b0 for 30 minutes.
- Remove and let set about 5 minutes before cutting into portions.
- Serves 8 to 10.
