Braised Chicken W Artichokes
- 8 boneless chicken thighs
- 3TBS olive oil
- 1diced yellow onion
- 3sliced cloves of garlic
- 1tsp turmeric
- 1/2tsp cumin
- 1/2tsp coriander
- Red pepper flakes
- 1/4 tsp cinn
- 1bay leaf
- 2cups chicken broth
- 2tsp lemon zest
- 3TBS lemon juice
- 1diced and sauteed sweet potato
- 8 artichoke hearts
- 1/2 cup green olives
- 2TBS chopped cilantro or mint
- Brown chicken in oil and remove.
- Add onions and cook til brown.
- Sauteed garlic for 1 min and add spices, cooking another minute. Clean pan with 1/4 cup broth.
- Add 13/4 cups broth, lemon zest, 2TBS lemon juice. Cover. Simmer 15 min.
- Add chicken, potatoes, artichokes and olives.
- Simmer uncovered to heat chicken. Add rest of lemon juice. Garnish and serve.
