Millionaire Stuffed Shrimp

  1. Peel and devein shrimp, leaving tails intact; cut a slit almost through back of shrimp, using a paring knife.
  2. Open shrimp and flatten.
  3. Bring water to a boil.
  4. Add shrimp; cook 1 minute. Drain.
  5. Place in shallow pan.
  6. Cook onion, green pepper and celery in 1/4 cup butter in a skillet, stirring often, until tender.
