Hot Chicken Sandwich
- Homemade Sauce
- 1 can 19 oz tomato juice
- 4 Tbs Worcestershire sauce
- 1/2 Tsp dryed mustard
- 3/4 cup brown sugar
- 3/4 cup vinegar
- 1 tsp salt
- 2 Bay leaf
- 1 Tbs butter
- 1 medium oignon cut in 4 wedges
- Sandwich
- Bread slices
- Cooked Chicken
- Mayonnaise
- For sauce:
- Incorporate in a medium sized sauce pan all ingredients. Bring to boil and let simmer for 1h30 or 2 hrs. Once done pour, through a sieve, in another smaller pan to extract Bay leaf &onion. Keep warm. Makes enough for 3-4 sandwiches.
- Sandwich:
- Spread mayo, to taste, on bread, add chicken, some sauce, and complete with other slice of bread. Pour some additionnal sauce on top of sandwich.
- Best served with small green peas and French Fries.
