Bestemor'S Macaroni Salad
- 1 lb macaroni (shells or salad macaroni)
- 1 lb thick cut bacon
- 1 can peas
- exact proportions are not important
- bell pepper (any)
- green onions
- celery
- parsley
- sharp white cheddar
- mayonnaise
- salt and freshly ground pepper
- cook macaroni in boiling salted water until slightly underdone. drain in colander and rinse with cold water to cool the macaroni down quickly
- pour one can peas over the cooled macaroni in the colander
- fry bacon until crisp and not overdone ( drain on paper towel and cut into small pieces when cool enough)
- finely dice bell pepper, celery, slice and dice green onion including tops, chop parsley, finely dice cheddar.
- place all above ingredients in a large mixing bowl. Season generously with salt and pepper. Add mayonnaise (enough to moisten) and mix. The flavor can be enhanced by adding some freshly squeezed lemon juice.
- refrigerate covered to allow flavors to meld. You need enough mayo to move into the macaroni and keep the salad moist but not so much that the salad is wet.
