Bestemor'S Macaroni Salad

  1. cook macaroni in boiling salted water until slightly underdone. drain in colander and rinse with cold water to cool the macaroni down quickly
  2. pour one can peas over the cooled macaroni in the colander
  3. fry bacon until crisp and not overdone ( drain on paper towel and cut into small pieces when cool enough)
  4. finely dice bell pepper, celery, slice and dice green onion including tops, chop parsley, finely dice cheddar.
  5. place all above ingredients in a large mixing bowl. Season generously with salt and pepper. Add mayonnaise (enough to moisten) and mix. The flavor can be enhanced by adding some freshly squeezed lemon juice.
  6. refrigerate covered to allow flavors to meld. You need enough mayo to move into the macaroni and keep the salad moist but not so much that the salad is wet.
  7. Enjoy!
