Pepper Bean Salad
- 1 15oz can kidney beans
- 1 15oz can pinto beans
- 1 15oz can corn
- 1 red onion chopped
- 2 garlic cloves chopped
- 1 red bell pepper chopped
- 1 jalapeno pepper chopped
- 1/2 cup chopped fresh cilantro
- 1 teaspoon ground cumin
- 1 tablespoon ground cayenne pepper
- 1 teaspoon ground black pepper
- 1 teaspoon salt
- 1/4 cup canola oil
- 1/2 cup vinegar
- juice of 2 limes (1/4-1/2 cup)
- Mix beans and vegetables together in a large sealable bowl.
- Blend remaining ingredients in a separate smaller bowl for dressing.
- Pour prepared dressing over main ingredient mixture. Seal bowl and chill several hours or overnight before serving.
