Stewed Pork With Lentils
- 8 oz smoked bacon
- 3 lbs pork butt, fat trimmed and cut into 1" cubes
- 2 cups diced celery
- 1 cup chopped shallots
- 1 tbs. chopped sage
- 1 cup red wine
- 3 cups chicken stock
- 1 oz dried porcini mushrooms
- 1 cup french green lentils
- 1/2 cup heavy cream
- In a large saute pan cook chopped bacon until crisp. Remove to a casserole or slow cooker. Add pork to rendered bacon fat and brown. when browned add celery and shallots and cook 10 minute longer till softened. Add pork and vegetables to bacon in the casserole along with sage and season with salt and pepper. Add wine, stock, cream, lentils, and porcini and bring to a simmer. Cover and cooking a 270 degree oven or in a slow cooker for 3 hours.
