Sweet & Sour Pork

  1. Place sherry, soy sauce and pork in a bowl. Stir and allow to stand for 15 minutes.
  2. Sauce: Heat oil and fry pepper and onion for 2 min. Add ginger, carrot, pineapple, sugar, soy and tomato sauce, vinegar and sherry.
  3. Bring mixture to a boil, stir in blended cornflour and cook for one minute.
  4. Toss pork in combined flours. heat oil in a saucepan and fry pork untilo golden brown. drain well on absorbant paper. Combine pork and sweet and sour sauce.
  5. Use 2 tbsp of mixture as a filling for each sandwich.
