Sweet & Sour Pork
- 2 tbsp dry sherry
- 1 tbsp soy sauce
- 1 cup lean pork, cut into 1 cm cubes
- SAUCE
- 2 tbsp oil
- 1 green pepper, chopped
- 1 onion, chopped
- 1 tsp finely chopped green ginger (opt)
- 1 carrot, cooked and chopped
- 3/4 cup pineapple pieces
- 2 tbsp sugar
- 1 tbsp soy sauce
- 1 tbsp white vinegar
- 1 tbsp tomato sauce
- 1 tbsp dry sherry
- 2 tbsp cornflour, blended with 1/2 cup water.
- 1 tbsp plain flour
- 1 tbsp corn flour
- Oil for frying
- Place sherry, soy sauce and pork in a bowl. Stir and allow to stand for 15 minutes.
- Sauce: Heat oil and fry pepper and onion for 2 min. Add ginger, carrot, pineapple, sugar, soy and tomato sauce, vinegar and sherry.
- Bring mixture to a boil, stir in blended cornflour and cook for one minute.
- Toss pork in combined flours. heat oil in a saucepan and fry pork untilo golden brown. drain well on absorbant paper. Combine pork and sweet and sour sauce.
- Use 2 tbsp of mixture as a filling for each sandwich.
