Rolled Fillet Of Sole

  1. Wipe each fillet and sprinkle with salt and pepper.
  2. Sprinkle cheese and onion on each fillet.
  3. Roll jelly-roll style and secure with toothpick.
  4. Dip each rolled fillet in egg or water wash.
  5. Coat with bread crumbs.
  6. Place in well buttered dish.
  7. Pour melted butter over top and bake at 400u0b0 for 25 to 30 minutes.
  8. Place under broiler until bread crumbs brown, 1 or 2 minutes.
  9. Garnish with parsley and lemon wedges.
  10. Even if you are not a seafood cook, try this.
