Turkey Pasta Sauce
- 2 Tbsp. olive oil
- 2 medium onions, chopped
- 3 carrots, chopped
- 3 stalks celery, chopped
- 1 lb. turkey Italian sausage (we use Diestel sausage, available at Pure Sausage and Meat on Pershing)
- 1 lb. ground turkey
- 1/2 c. red or white wine (optional)
- 2 (28 oz.) cans tomatoes
- Saute chopped vegetables in olive oil in a large pot on medium-high heat for about 10 minutes.
- Add turkey sausage and turkey and crumble; cook at medium heat, crumbling turkey and stirring until turkey loses pink color.
- If using wine, add wine and cook at medium-high heat until most of wine liquid has evaporated.
- Add the tomatoes (chop some of the tomatoes in the pot with a spatula, if whole) and lower heat to keep simmering.
- Simmer one or two hours.
- Serve over your favorite pasta.
- More than enough sauce for one pound of pasta.
