Easy Veggie Chili
- 2 large cans diced tomatoes
- 1 can pinto beans
- 1 can kidney beans
- 1 large zucchini cut into bite-sized pieces
- 1 red bell pepper cut into chunks
- 1 green bell pepper cut into chunks
- 3 jalapeno peppers seeds and meat removed chopped
- 1 package of sliced mushrooms
- 5 cloves of garlic minced
- 2 tsp hot chili powder
- 1 tbsp of garlic powder
- 1 tsp garlic salt
- salt to taste
- 1 tsp black pepper
- 1 tsp red pepper flakes
- 1 tsp ground cumin
- 1 tsp steakhouse seasoning
- 1 large onion chopped
- 2 lbs stew beef (cubed beef)
- 1 bottle of beer (miller lite)
- in a large preheated pot combine onions, garlic and beef.
- when beef is browned add all other veggies and bottle of beer
- after simmering a few minutes add cans of kidney and pinto beans (drained and rinsed), tomatoes and all spices
- simmer for 2-3 hours and serve!
