Mango Chicken

  1. cut chicken into 4 inch pieces
  2. cut onions, peppers,amd mangos into 1 inch pieces
  3. whisk together stock,sugar,soy sauce,vinegar,cornstarch,and curry paste
  4. stir fry chicken until no longer pink
  5. transfer chicken to a plate
  6. add remaining oil and stir fry peppers and onions about 2 mins
  7. stir in ginger and garlic cook 30 sec
  8. add stock mixture and chicken cook stirring for 2 min or until sauce thickens and chicken is hot
  9. stir in mangos
