Grilled Citrus/Ginger Salmon Salad
- 2 5oz salmon filets
- 1 carrot julliened
- 1 head romaine lettuce
- 1 sweet onion
- 2 lemons
- 1 orange
- olive oil
- 2 T minced garlic
- 2 T minced ginger
- 1/4 cup rice wine vinegar
- 1 t 5 spice powder
- Prepare marinade by combining lemon and orange juices and zest,vinegar,olive oil garlic,ginger and 5 spice in a small bowl. Whisk until well combined.
- remove 1/4 cup of marinade and set aside for dressing.
- Marinate salmon for 1 hour. Preheat grill and slice onions 1" thick.
- Brush onions with olive oil and salt and pepper and place over heat until lightly charred.
- Cook salmon over moderate heat about 4 minutes per side.
- Wash and chop lettuce.
- Add 2 T oil to reserved marinade to make a dressing, whisk until well combined.
- Place lettuce on the plate and cover with a bed of onions and salmon filet. drizzl dressing over top and serve with lemon wedges.
