Hibiscus Salad
- Salad:
- 2 heads romaine lettuce (torn bite size pieces)
- 1 C. fresh mint, chopped
- 15 oz. can chilled mandarin oranges, drained
- 1/2 C. honey roasted sunflower seeds
- 1 C. dried cranberries
- Honey Key Lime dressing
- Dressing - Makes 1 cup:
- 1/2 C. walnut oil
- 1/4 C. Key Lime juice or fresh lime juice
- 2 T. honey
- 2 T. red onion (minced)
- 1/4 t. salt
- 1/8 t. fresh ground pepper
- Dressing: Place all ingredients in the blender or food processor. Emulsify and chill.
- Salad: Toss lettuce well with dressing to coat. Place on salad platter or individual plates. Sprinkle with sunflower seeds, oranges and cranberries on top. Drizzle with more dressing if desired. Serve immediately.
