Migas
- vegetable oil
- 1/4 medium onion (chopped)
- 1/2 medium bell pepper (chopped)
- 1 jalapeno pepper (diced)
- 1/2 cup cooked black beans
- 2 cups tortilla chips or tortillas, broken/cut into pieces
- 4 eggs
- splash of milk or cream
- fresh cilantro (for garnish)
- chopped avocado (for garnish)
- shredded cheddar cheese (for garnish)
- chopped tomatoes (for garnish)
- Mix the eggs and milk in a bowl and set aside
- Heat a large skillet over medium high heat.
- film the pan with vegetable oil
- add the onion, bell pepper and jalapeno
- cook for 2-3 minutes
- add the black beans and tortilla pieces (or chips)
- Mix well and allow the beans to heat through.
- Add the eggs.
- Mix until the eggs are cooked
- We like to separate this out into serving bowls and have a range of garnishes for everyone to assemble what they want.
