Dilled Shrimp And Feta Salad
- 1 pound large shrimp - helled and deveined
- 3 green onions, sliced thin
- 1/2 medium cucumber, peeled, seeded and chopped
- 4 0z chopped pimientos (drained and patted dry)
- 2 tablespoons fresh dill or minced parsley
- 1/4 cup rinsed and crumbled feta cheese (about 1 oz)
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- 1 tablespoon white wine viegar
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- 1/4 teaspoon black pepper
- In a small saucepan over moderately high heat, bring 1 quart unsalted water to a boil. Add the shrimp and cook, stirring until firm, about 2 minutes. Drain and rinse under cold water and then drain again. Place the shrimp in a large bowl and add the green onions, cucumber, pimientos, dill and cheese. In a small bowl, whisk together the lemon juice, oil, vinegar, mustard, garlic and pepper. Pour over the shrimp mixture and toss gently to mix.
