Chicken Divan
- 2 10-oz pkgs. frozen broccoli, cooked slightly to warm
- 2 c. cooked chicken, sliced
- 6 Tbls. butter
- 6 Tbls. flour
- 3 c. chicken stock
- 1/2 c. heavy (whipping) cream
- 1/2 tsp. Worcestershire sauce
- 1 c. grated parmesan cheese
- 1 tsp. mustard (Dijon)
- 2 Tbls. onion, minced
- 2 Tbls. white wine
- salt and pepper
- In the bottom of a 3 qt. casserole, place cooked broccoli. Place cooked chicken on top.
- In a small saucepan, melt the butter and whisk in the flour. Gradually add the chicken stock whisking to mix over medium heat until it starts to thicken. Add the Worcestershire sauce, cheese, onion and wine. Stir over low heat until the cheese melts. Salt and pepper to taste. Pour sauce over heat and broccoli. (may refrigerate at this point, covered)
- When ready to use, bring to room temperature and bake at 400 for 30 minutes.
- Serve with rice or pasta
