Western Meat-In-One
- 2 lb. ground beef
- 1 clove garlic, minced
- 1 large onion, chopped
- 1 tsp. chili powder
- 1 (1 lb.) can kidney beans
- 1/4 c. chopped ripe olives
- 3/4 c. shredded Cheddar cheese
- 1 tsp. salad oil
- 1 tsp. salt
- 1 green pepper, chopped
- 1 (1 lb.) can tomatoes
- 3/4 c. rice
- 3/4 c. mushrooms
- Brown meat in oil.
- Add garlic, salt, onion, green pepper and chili powder and saute for 5 minutes or until vegetables are limp. Mix in tomatoes, kidney beans and rice and turn into a 2-quart casserole.
- Bake, uncovered, in a 350u0b0 oven for 45 minutes. Sprinkle with olives and cheese.
- Continue baking for 15 minutes or until cheese is melted.
- Serves 6 to 8 people.
