Cold Seafood Salad, Tuscan Style
- olive oil
- salt
- black pepper
- green or black olives
- garlic, sliced
- fresh parsley, chopped
- lemon juice and wedges
- Cherrystone, Littleneck, or Manilla clams
- baby shrimp, out of the shell
- squid
- Soak the clams in cold water until they release sand. Steam the clams until they open and remove them from their shells, discarding any that haven't opened. Strain them and set aside broth.
- In 2 separate pots, steam the shrimp and the squid until they are white and tender. Mix the clams, shrimp, and squid in enough olive oil to moisten well and place them in a bowl with the sliced garlic, parsley, lemon juice, salt, and pepper. Add some reserved clam broth and serve cold with lemon wedges and olives.
