Asparagus Quiche
- 1 pound fresh baby asparagus, trimmed and cut into 1/2 inch pieces.
- 10 slices bacon
- 2 T. butter
- 1 onion, chopped
- 1 tsp. minced garlic
- 4 eggs, beaten
- 1 1/2 C. half & half cream
- 1/4 tsp. nutmeg
- salt and pepper to taste
- 2 C. Swiss Cheese or shredded mozzarella
- Preheat oven to 400 degrees
- Place asparagus in steamer over boiling water. Cook until tender but firm. 2-5 min. Fry bacon until crisp. Set out onto a paper towel.
- If using a single crust, Place into a quiche dish, prick with a fork and weight down crust. Bake for 10 min. in preheat oven. Remove from oven.
- Add pizza ingredients: fried and crumbled bacon, chopped asparagus, and cheese. Top with beaten eggs mixed with spices and garlic.
- Bake uncovered for 35-40 min. Let cool slightly before cutting.
