Blueberry, Lemon And Ricotta Pancakes
- Pancakes
- 2 cup milk
- 2 eggs
- 2 tsp vegetable oil
- 1/3 cup ricotta cheese
- zest of 1 fresh lemon
- 2 tsp lemon juice
- 1/3 cup white sugar
- 2 cup flour
- 2 tsp. baking powder
- pinch of salt
- 1 cup blueberries
- Maple-Butter Sauce
- 1 cup Maple Syrup
- 1/2 cup butter
- Wisk butter and syrup together over low heat until melted
- Combine wet ingredients in a large bowl. Combine dry ingredients in a smaller bowl
- before adding to wet ingredients. Gently stir in blueberries. Drop batter by 1/4 measures
- onto a hot griddle and cook until deeply golden on both sides. Serve with Maple-Butter
