Gail'S Gazpacho
- 2 Cucumbers, peeled
- 1 Green pepper, seeded and peeled
- 1 Onion, peeled and chopped
- 4 cloves Garlic
- 2 cups Vegetable broth
- 6 Tomatoes, peeled
- 1/4 cup Apple Cider Vinegar (or red wine)
- 1 Juice of 1 Lemon
- 1 can Tomatoes, diced
- 2 tablespoons Tomato paste
- 1/4 teaspoon Cayenne
- 2 teaspoons Salt
- 1 tablespoon Thyme
- 1. Combine all vegetables, fresh and canned, in a large blender. Add broth. Blend until smooth.
- 2. Season with thyme, vinegar, lemon juice, salt, and cayenne to taste.
- 3. Add tomato paste for color.
- 4. Refrigerate overnight. In the morning, taste and adjust seasonings.
- 5. Serve very cold.
